The magic of A5 wagyu lies in its delicate marbling and rich umami. How well that survives freezing-and-thawing is what separates ordinary frozen beef from a true premium experience. We use Proton magnetic flash-freezing for exactly this reason.
The limits of conventional freezing
Standard quick-freezing drops the temperature rapidly but cannot fully stop water molecules from clustering. When ice crystals form, they pierce cell membranes — and when you thaw the meat, “drip loss” carries the umami compounds out with it.
How Proton freezing works
Proton freezing applies a magnetic field and high-frequency waves while rapidly chilling the meat to -30 °C. This suppresses water-molecule clustering, which means:
- Ice-crystal formation is minimised
- Cell membranes stay intact
- Drip loss after thawing drops to roughly one-third of conventional freezing
- The marbling fat structure is preserved
- Even after 6 months of storage, the texture is close to fresh refrigerated meat
