The limits of conventional freezing

Standard quick-freezing drops the temperature rapidly but cannot fully stop water molecules from clustering. When ice crystals form, they pierce cell membranes — and when you thaw the meat, “drip loss” carries the umami compounds out with it.

Proton freezing applies a magnetic field and high-frequency waves while rapidly chilling the meat to -30 °C. This suppresses water-molecule clustering, which means:

  • Ice-crystal formation is minimised

  • The marbling fat structure is preserved
  • Even after 6 months of storage, the texture is close to fresh refrigerated meat
